Ladies, have you heard that old expression, the way to man’s heart is through his stomach? I’m challenging that, or rather adding another in the mix. What’s good for the goose is good for the gander, mofo! Yeah, because if you think about it the way to anyone’s heart is through their tummy. Has anyone ever made you dinner who didn’t love you a least a little? Have you ever cooked for someone without genuinely caring for their well-being and happiness? Doubt it. So fellas, and ladies who like ladies, cook for the one you love! Preheat the oven and dress to impress. I’m here to show you how to make a sexy Valentine’s dinner for two…with leftovers for both of you. Don’t forget to have cute little tupperware to-go containers ready, too. Absolute swoon!
I remember the first meal Honeybee made for me. Honeybee is a man who knows how to woo a lady. It was our first date and he was very careful to inquire about any dietary restrictions. It was a tender steak with roasted red potatoes and we shared a petite baguette to dip in the sauce. That first meal taught me a lot about my now-husband. Meal-making requires planning so I knew he was responsible. He cooked with an apron, so I could tell he was passionate enough to make a mess, but mindful enough to keep it clean underneath. Oh first dates!
My veggie meatloaf is definitely made of meat but there’s a serving’s worth of veggies in each one. You could easily make this with meatless “meat” crumbles to accommodate a vegetarian diet. Then I suppose you’d call it Vegetarian Mini Veggie Meatless Meatloaf & Mashed Potatoes. Quite the mouthful.
Gather these things.
Mini Meatloaves: 1 lb ground beef or meatless meat crumbles, 5 crackers, 1 stalk celery, 1 serrano pepper, 1/2 red pepper, 1/2 yellow or orange pepper, 1 small onion, 1 clove garlic. 1 egg. Red pepper flake. Black pepper. Salt. 1/2 carrot.
Mashed Potatoes: 1 lb red potatoes. 1 tsp olive oil. Course ground sea salt. 1/2 cup coconut milk. 2 cloves garlic.
Suggested bread: Pugliese Petite Boule
Here’s what you do:
Preheat your oven to 375. Combine meat, spices, crackers, egg, chopped veggies and whatnot. All the meatloaf ingredients! In a bowl. Place the mixture in your meatloaf pan or, in this case, mini meatloaf casserole dishes.
Then top with ketchup. This particular day I had some leftover red sauce from earlier in the week, so I topped it with that, too! Plus salt and pepper. Pop those bad boys in the oven for 45 minutes.
Add olive oil and salt to your potatoes and boil for ten minutes.
When they’re done boiling, use a strainer to drain off excess water.
Add butter to your still warm pot, potatoes, garlic and mash until you feel real good about it. Mix in coconut milk until you get your perfect consistency. Boom. Done. I kept the skins on because they’re good for you and it looks prettier that way, but you could remove them if you wanted.
Then avert your attention back to your meatloaves.
When they’re done, plate up and enjoy! Voila! Easy peasy super cute date food! Don’t forget to set the scene. I want to see some candles, people!
